Cake
Lapis, also called Kueh Lapis (Malay) or Lapis Legit (Indonesian), is a
rich Indonesian cake flavored with various spices, including several of
allspice, aniseed, cardamom, cinnamon, cloves, nutmeg, etc., with
alternating dark and light layers that are gradually formed during the
meticulous baking process.
However,
it is widely believed that it was the Dutch that created the original
recipe (Spekkoek, "fat/lard cake") as far back as the 19th
century, as the Dutch had great passion for spices.
Cake
Lapis used to be associated with exclusive social status and would only
be offered to special guests and served at special occasions.
Did you know? Cake Lapis is baked
layer by layer from the base layer to the top layer. Do we bake the
alternating dark and light layers separately? No. Each layer has actually
two colors formed at the same time, with the dark part (top layer) formed
by the heat of the top grill of the oven.
